Since I was a kid, I was taught that dinners have to take at least 3-4 quadrants of a plate. Much like a cafeteria tray.

- Protein
- Vegetable
- Starch
- Possibly Another Starch
I feel like I’m always trying to replicate that in some capacity. But sometimes I just want a sandwich for dinner. Or sometimes I’m just not really that hungry, and would prefer to snack on edamame. Today was sort of one of those nights.

Took maybe two minutes to prep.
And I loved it. It wasn’t a glamorous dinner, it certainly wasn’t sexy, but it hit the spot.
You can find so much happiness in the simplest things.

Unhappy though were these leftover roasted vegetables.

One bite and I decided to pass. Some things just don’t age gracefully.
